Pasta with Prawns, Asparagus & Spinach


Now that the weather is getting better and spring is knocking on the door, I feel like sharing a recipe of a simple and quick Pasta dish that I usually do when it’s summer – because it goes well with white wine and even tastes better if served outside under a star lit sky.



These are the ingredients:

  • Carrots (diced)
  • Celery (diced)
  • Garlic (finely diced)
  • Prawns
  • Asparagus (peeled, cut into small pieces and cooked)
  • Tomatoes (the small ones, cut into halfs)
  • White Wine
  • Tomato-Sugo
  • Baby Spinach
  • Oregano
  • Sea Salt
  • Pepper
  • Parmesan
  • Basil
  • Pasta


Stir fry Garlic, Carrots and Celery for about a minute, add Prawns and after 1-2 min add the cooked Asparagus and Tomatoes. Cook for another 2 min, deglaze with wine, let is simmer fo another minute , then add the Sugo. After a couple of min simmering, you can add the Baby Spinach, some Oregano, Sea Salt and Pepper. Add the Pasta to the sauce and mix well. Serve with Basil and Parmesan.


Tip: Which Pasta? I’m cooking with Rummo. I got to know this brand from a visit to Italy and it was highly rated during a test by one of the major German newspapers. Before I used a cheaper Italian Pasta brand, but trust me, the price for Rummo is worth it!
