Lemon Cake


Today (Sunday) I was lazy, almost doing nothing. But at least I managed to bake a lemon cake. I have baked my lemon cakes according to the recipe below for several years already and I am always satisfied with the result. Even though the texture is compact, the lemon and lime balance this out with their fresh taste.

Here is the recipe:
3 Eggs
150g Sugar
60g Crème Double
70g Spelt Flour
60g Wheat Flour
1 Tea Spoon Baking Powder
50g Butter
Zest of two Lemon
2 Table Spoons Lime Juice

Batter and froth the eggs together with the sugar. Batter in the crème double and then sift the mixture of flours and baking powder to the dough and add the butter. Finally add the lemon zest and the lime juice, then put into the oven for about 4o min at 160-170°C (my oven is not working properly, I always need less time than others for same recipes, so you might want to add a few minutes).

I once replaced the creme double with whipped cream and it also turned out well.
